When freshly picked, tomatillos have a dry, papery husk around them. We've got them ready to use with the husk removed or "peeled".  Tomatillos look a lot like small green tomatoes, but have a much brighter, acidic and tangier flavor.  Roasted or raw, they are delicious in salsas to sauces.
